In a forgotten corner of northern Italy, where the Venetian coastal plain rises to form the first foothills of the Alps, lies the Valle delle Volpi or Valley of the Foxes.

Located in the exclusive superiore DOCG region of Asolo-Montello, where sumptuously pale grapes produce exceptionally delicate sparkling wines and, according to legend, where foxes gather to play in the pale moonlight among the vines.

It is here one summer’s afternoon in 2018 two English wine enthusiasts tasted for the first time what surely had to be the ultimate sparkling wine. They were inspired to bring this wine to the world and named it Pale Fox in honour of its birth place.

After 4 years of development, Pale Fox proudly released their Alcohol Free Cuvée. They produce this by following the same initial process that goes into making their Prosecco and Prosecco Rosé, by crushing and pressing the finest grapes and vinifying a white wine.

By using an advanced technique called Direct Osmosis, they are able to separate out the alcohol from the wine without removing or stressing the phenolic compounds and aromas.

AWARD WINNING GRAPES

We use the same award-winning hand-picked Glera grapes from our flagship Prosecco, picked from the mineral rich soil of the Valley of the Foxes.

This is balanced with Pinot Grigio from Friuli, a grape that is perfect for dealcoholisation as it holds on to its Aromas and Flavonoids well during the Direct Osmosis process.

LOW PRESSURE

We use a process called Direct Osmosis to extract the alcohol from our wine. As opposed to the more common method of Reverse Osmosis, which uses pressures of up to 50 atmospheres.

Direct Osmosis uses only 1.5 – 2 atmospheres. The process is costlier and takes longer but the lower pressure transfer allows the extraction of the alcohol without compromising the taste and aroma.

LOW TEMPERATURE

Unlike more popular thermal distillation techniques like vacuum distillation and spinning cone column extraction, alcohol is extracted without the need for heating the wine. As above, this results in far less stress and denaturation of the flavour compounds in the resulting liquid.

NO ADDITIVES

Unlike most other non-alcoholic products on the market, Pale Fox do not add any stabilizers or preservatives to their wine. They just use a small amount of sulphites, a technique ubiquitous in regular winemaking practices.

PROUD TO BE VEGAN

Pale Fox is proud to be 100% plant-based. Counter-intuitively this is not true of a lot of wines available today, which are filtered using animal products, whether that be fish bones or egg whites. We use a natural clay called Bentonite instead and can assure you that no animal, or Fox, was harmed in the process of making this wine.
